HOW TO MAKE A PEACH AND THYME-INFUSED GIN COCKTAIL

There’s nothing better than a fresh peach that is in season. I picked up some peaches at the Farmer’s market recently, and decided that I was going take a few of them and make a cocktail for my virtual happy hour with some girlfriends. As delicious and naturally sweet as the peaches were, the real MVP of this cocktail was the thyme-infused simple syrup. Good thing I made a big batch of it because I’m also going to put it in some lemonade and iced tea later on this week. Ok - let’s jump in!

PEACH AND THYME-INFUSED GIN COCKTAIL

INGREDIENTS

  • 1.5 OUNCES OF GIN

  • 1.5 OUNCES OF THYME SIMPLE SYRUP

  • 1.5 OUNCES OF LIME JUICE

  • 1 PEACH

  • FEW SPRIGS OF THYME

INSTRUCTIONS

Simple syrup: add 1 cup of water, 1 cup of sugar, and several sprigs of thyme in a saucepan. Place on a low heat for 20 minutes - until sugar has dissolved. Remove from heat and cool.

In your shaker, muddle diced peach, syrup, and lime together. Add gin and ice and shake for about 30 seconds. Strain cocktail into your glass and garnish. Enjoy!
