HOW TO PICKLE VEGGIES

This morning I woke up and the first thing I thought was “I’m going to pickle some veggies today”. Weird, right? It’s amazing what this time in quarantine has us all doing. But for some reason, I was craving pickled veggies so I picked up some Ball jars from a friend, went to the grocery store to pick up all the ingredients and came up to get started.

It really is the easiest thing to make, and if you loved pickled veggies and all things sour - then you have to try this out. I mean, what else are you doing while we’re all shut in the house? Here’s the recipe:

Combine 2 cups of water, 2 cup of vinegar (I used apple cider vinegar), 2 tablespoons of salt, and 4 tablespoons of sugar in a pan and bring to a boil.

Cut up your veggies (I used carrots, cucumbers, and onion), garlic and place into jars. I added garlic to each jar, as well as peppercorns, and seasonings.

Once the liquid has boiled, fill each jar to the top and put on the lids. Leave sealed jars on the counter for 6-8 hours and then place in fridge. They can last in the fridge for up to 4 weeks.

Just a few moments ago I tried the pickles and all I can say is - girl. SO GOOD! I consider myself a pickle connoisseur and for me to say they’re good - they’re good!!
